As part of my 21 Days of Chia Pudding series (Day 16!), this one quickly became a favorite. It’s simple to make, incredibly satisfying, and feels a little extra without any extra effort.

Ingredients

For the matcha chia pudding base:

  • 1 cup milk (any kind)
  • 1 cup greek yogurt
  • 1.5 tbsp maple syrup
  • 1/4 cup chia seeds
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/2 tsp cinnamon
  • 1–2 tsp matcha powder (adjust to taste)

For the strawberry topping:

  • 1/2 cup fresh strawberries, mashed

Tips for the Best Chia Pudding

  • Stir the pudding again after 10–15 minutes to prevent clumping
  • Adjust matcha based on your preference (start with less if you’re new to it)
  • Add a splash of milk before serving if it thickens too much
  • Keep toppings separate if prepping for multiple days

  1. In a medium bowl or jar, combine the milk, Greek yogurt, maple syrup, cinnamon, vanilla extract, almond extract, and matcha powder. Whisk until smooth and well blended.

  1. Add the chia seeds and whisk until they are evenly distributed. 

  1. Cover and refrigerate for at least 2 hours or overnight, until the pudding has thickened to your desired consistency. 

  1. Split the chia pudding into 2-3 servings and add the mashed strawberries on top. 

    Add your other favorite toppings.

  1. Enjoy!
