Following the success of our blueberry version, Day 7 brings the classic Strawberry Cheesecake flavor to the series. It’s creamy, slightly tangy, and perfectly fruity.
This is Day 7 of my 21 Days of Chia series, proving that cheesecake belongs at the breakfast table.
The combination of a tangy "cheesecake" base with a fresh strawberry compote creates a beautiful layered effect that looks as good as it tastes.

This Strawberry Cheesecake Chia Pudding is creamy, slightly tangy, and perfectly sweet!
Blend or mash strawberries
Blend strawberries until smooth or mash for a chunkier texture.
Mix the base
In a bowl or jar, combine milk, Greek yogurt, maple syrup, cinnamon, vanilla extract, and almond extract.
Add chia seeds
Stir in chia seeds until evenly distributed.
Combine with strawberries
Mix in the blended or mashed strawberries until fully incorporated.
Chill
Cover and refrigerate for at least 2–4 hours or overnight until thickened.
Stir & enjoy!
Stir well before serving and adding your favorite toppings.
This strawberry chia pudding thickens as it chills, creating a creamy, spoonable texture. Be sure to whisk well when mixing and again after 5–10 minutes to prevent clumping. If it becomes too thick, simply stir in a splash of milk to loosen it. Made with Greek yogurt, cottage cheese, chia seeds, and fresh strawberries, this high-protein, high-fiber chia pudding is perfect for meal prep, a healthy breakfast, or a naturally sweet snack.
